First, I'm so so sorry to hear you had/have a Stalker. I'm sorry you had to go through that.

In all honesty, I don't have a perfect answer for you. LinkedIn has become the main and (mostly) only tool Recruiters, HR professionals, Interviewers, and Hiring Managers use to find and review talent... and it's growing by the minute.

With that said, I would probably thinking about having your own password protected website where you can showcase your experience, work, and skills. It won't be discoverable by Recruiters, but you could share those details when applying for jobs.
